French Onion Soup

Ingredients:
1 and 1/2 lbs of onions (5 cups when sliced)
6 cups of beef or chicken stock
1 tablespoon of chopped fresh parsley
1/4 cup of butter
1/4 teaspoon of dried thyme
Salt and Pepper
1 cup of grated cheese (old-forte preferred)

Peel the onions and slice them thin into a small deep fry pan. Sauté them in the butter until glassy looking. Add the remaining ingredients, season to taste and simmer them for 30 minutes. Top with cheese and serve with small bread loaves (baguettes preferred).
