Welsh Cakes

Source: unknown,.but man are they good

Fetch the following first:

2 cups of flour
1 teaspoon baking powder
1 teaspoon allspice
1/4 teaspoon salt
1/2 cup of sugar
1/4 cup of butter
1/4 cup of lard
1 egg
1/4 cup of milk
1/3 cup of currants

Now,
sift the flour, baking powder, allspice, salt and sugar together into a bowl.
Cut the butter and lard into the flour using two knives and mix thoroughly.
Put the egg and milk together in a cup and mix. Add the egg mixture to the flour mixture and blend well.
Now, blend in the currants.
Gather the dough into a ball. Now roll it out onto a floured board so that its 1/4 inch thick.
Cut two inch rounds and cook it on a very hot and well oiled frying pan until they are browned. Now turn and cook the other side until brown.
Serve them warm.
