Post by pud » Thu Dec 07, 2006 11:08 pm

INGREDIENTS:
3 cups of dried peas
1.5 cups of rice
6 cups of water
3/4 teaspoon of ginger
salt
pepper
parsley
onion
1 hard-boiled egg

PROCEDURE:
Soak the dried peas overnight. Drain the water and then add the rice and the 6 cups of fresh water. Cook for two hours. Now add the ginger, salt and pepper to taste. Cook for one or two more hours. Kedgeree should have a thick consistency. Cut the onion into rings and fry them in a skillet. Slice the hard-boiled egg into rings as well. Garnish with a parsley, fried onion rings and hard-boiled egg slices.
